    Delighted with this knife! The ergonomics of the Japanese knife aesthetic combined with dirt low price is a winner in my book. I love the feel, thinness and light weight of Japanese knives,Shuns in particular, but the chipping of the layered steels is ridiculous, and the price too much.

    These Wasabi knives are perfect for a pinch grip, light weight and don''t have the "seen way too much" 3 western style rivets on the handles. Some may find the plastic/bamboo powder handles too plain Jane, but their matte black recessive quality works for me.

    Arrived not quite as stealthily sharp as a Shun or other $100+ knives, but perfectly respectably sharp for most home users. Edge retention has been good--better than my softer Henckles German steel. I will be using with my Chefs Choice Asian hand held sharpener to always have respectably sharp 15 degree light weight Japanese knives on my counter for a fraction of what Shuns, Miyatas or Globals--along with some decent whetstones--cost; yes, those higher end knives are better, get and stay a bit sharper on stones, yes... but you have to pay for it and work on sharpening skills or pay for sharpening. These Wasabis are so close in terms of sharpness and edge retention, and so much more affordable, again, I''m sold. Plan on getting the Nikiri and the utility knives soon...

    I''ve used this knife (8-inch Chef) for the past three years in an active home kitchen environment.

    Pros: While there are a few scratches on the blade from sharpening or a honing steel, this steel is extremely resistant to corrosion or spotting -- a plus for some. I have found that this knife rarely needs sharpening and I''ve put it through the Spyderco Sharpmaker system maybe 1 - 2 times in the past three years -- incredible. Most other times, a quick touch-up on a honing steel (or you could use a strop) is all that''s needed. I find that the handle loses none of its grip when wet or covered with veggie juices. The geometry of the blade is such that it slices very nicely through most veggies and meats; it is thin for a 8-inch chef''s knife. At this price point, this steel is top notch. I have medium-sized, male hands and the handle fits perfectly.

    Cons: I find that I do fewer pinch grips due to the squared off top edge of the blade. The grippy plastic could be slightly better matched up with the brushed metal bolster, but I see no gaps which might retain food. The aesthetics of the handle are simple (some might find that a plus). Due to the thinness of material, I can''t recommend this knife for going through bone or ultra rough chopping.

    In summary, buy this knife if you need a budget-oriented chef''s knife for your kitchen. This is a safe and good knife to use for all prep work except the most extreme chores which are best left to something heavier / thicker.

    it''s a japanese chef knife, usually called a gyuto, so one thing you''ll notice is that it''s missing the bolster and is not full tang, but balances well.

    out of the box, it''s one of the sharpest blades i''ve encountered, most japanese knives come a bit dull, expecting you to do the laborious 2hours worth of wetstoning.

    as i said i almost never use this knife, but gradually come back to it b/c my other gyutos just don''t "feel" as good, this has a nice weight to it. (slow it''s become a everyday use knife, instead of a reference point)

    why 4 and not 5 stars? nothing deserves 5 stars, if i want to nit pick, this is an oval handle which is nice for lefties or righties but i''d prefer a more D shaped handle for righties.

    If you are a fan of Shun knifes then your in luck, Kai Wasabi (the makers of Shun) have come out with this wonderful value brand of knifes. The Kai Wasabi Black series knifes are near the sharpness of their expensive counter parts, what separates them is the lack of VG 10 steel and plastic handles. The cutting edge and weight are really nice, although a bit toward the lighter side. For those new to having nice knifes, make sure you DON''T put these in the dishwasher. The solvents in dish washing fluid will rust these faster than salt water even for 1 wash. Always hand wash your knifes!

    I did not use it for long but I already saw rust spot. Ive used other knifes at similar price points and it did not rust much. This knife is also lightweight. Not sure if this is bad or not but I like a bit heavier knife. It can cut well though.

In fact this blade is so sharp I used it to open several tightly sealed / bubble wrapped packages from Amazon right after I unpacked this and it was frightening how easily it slid through hard materials, literally like warm butter. Make sure to hand wash and dry it well, it is a high carbon blade and it will rust.
